“The best preparation for tomorrow is doing your best today.”

We rented the Al Taylor cabin in Targee National forest this week. “Off the grid” for 4 whole days, not including a day trip to St. Anthony for some Chinese food.
Mom was really excited that we happened to be at the very cabin she had vacationed at “6 times” when she was a child! She remembers every bush that magically haven’t grown in 65 years.
And the Chinese Food place in St. Anthony was the exact same one her family would eat at, with the same lady waiting our table. (Never mind that she was around 50 years old).
Logic is lost. Reality is slipping away. The repeated stories are wearing on all of us.

Today we are traveling 90 minutes to a Taylor family reunion, Shaun’s maternal family. JoAnn was nice to let her ride in her car for the trip both there and back. She needed the break from the boys. They are too loud for her long distances in car rides.
Once we were there, in a park pavilion next to the fairgrounds, she asked both Shaun and I at different times …. “whose funeral are we at?”
<<<<Katies Famous Camping CHILI>>>>

Olive oil, onion (or minced onion from Winco bulk foods), garlic sautéed for a few minutes. Add morning star crumbles, splash of Worcestershire, 1/2 can of beer (optional), cap full of liquid smoke and 1 tsp more or less of various spices, cumin, ground mustard, chili and garlic powder and let reduce. Add 2 cans of diced tomatoes, 1 can of tomato sauce, 2 cans of what ever beans are in the pantry and a can of corn. Bring to boil then simmer for an hour stirring occasionally or use the Instant Pot for 10 minutes on high pressure. DONE! “Best chili ever!” according to my Fam and it NEVER TURNS OUT THE SAME, go figure. 😉
