Banana Oat Muffins

I’ve made a commitment to shopping in the bulk food section of our local Winco to save money on our grocery bills. It’s made a huge difference so far, But now I need to revamp some recipes. Because I’m a visual person I decided to document and take pictures a few times a week to catalog my project. One of the best investments for cupcakes and muffins in my kitchen are these Silicone cupcake liners. I’ve been using for years and they still look new.Ingredients
  • 4 mashed ripe bananas
  • 3/4 cup brown sugar
  • eggs beaten
  • 1 tsp vanilla extract
  • 2 cups flour
  • 1 cup quick oats
  • 1 tsp baking soda
  • 1/4 tspsalt
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg (optional)
  • 1 stick (1/2 cup unsalted butter), softened

Preheat oven to 350 degrees F and line a cupcake pan with liners or non-stick spray.

Combine flour, oats, baking soda, cinnamon, nutmeg and salt.
In a separate bowl, blend butter and brown sugar, and vanilla. Stir in eggs and mashed bananas, mix till blended.
Combine dry and wet ingredients together.
Pour batter into muffin tray filling each cup about 3/4 full.
Bake in preheated oven for 16-18 minutes for muffins
Cool in pan for 10 minutes. Enjoy!
