Diet dilemmas

I have the task of feeding a variety of people with different chosen diets.

Family

L to R- Omnivore, vegetarian, vegetarian, vegetarian (at heart), vegan, omnivore. And mom is a flexitarian by default. She still loves a McDonald’s hamburger on rare occasions. So I decided to start to keeping track of our favorite family recipes here on my blog that most everyone agrees on when we are all together. I do not buy meat when grocery shopping, unless we are having a BBQ with extended family and I know they would refuse substituting their meat for black bean burgers (trust me we have tried).

Rice, Broccoli and Cheese Casserole

Ingredients 1-1/2 cups quick cooking white rice (about 4 cups cooked) ½ cup (1 stick) unsalted butter 1 medium white onion, chopped 4 cups fresh broccoli, large stems removed and broken into small pieces 1 can cream of chicken soup 8 ounces processed American cheese, divided ½ cup milk
