Cookies

I need to get my illustration game going, every day is a new cartoon opportunity…..

Me in kitchen making homemade bread, garden soup, and oatmeal cookies all from scratch for the last 3 and 1/2 hours….

Dinner time….

Mom: eating…. “did I ever tell you what a wonderful cook my mom was?”

Me: “yes you have” …. thinking….. ” every single dinnertime”

Mom: walking by the cookies….”ohh,  cookies!” Takes 2 cookies

5 minutes later……”ohh, cookies!” Takes another 2

5 minutes later……”ohh, cookies!” And another 2

Me: …..(hiding cookies)

CowBoy Cookies

  • 2 Eggs, large
  • 2 cups Oats, old-fashioned
  • 2 cups All-purpose flour
  • 1 tsp Baking soda
  • 1 1/2 cups Brown sugar, packed
  • 2 cups Chocolate chips
  • 1/2 tsp Salt
  • 1/2 cup Sugar
  • 1 1/2 tsp Vanilla extract
  • 1 cup Coconut, sweetened
  • 3/4 cup Pecans
  • 1 cup Butter

Directions

  • Place coconut and pecans on a 15x10x1-in. baking pan. Bake at 350° for 6 to 8 minutes or until toasted, stirring every 2 minutes. Set aside to cool. 
  • In a large bowl, cream butter and sugars until light and fluffy. Add eggs and vanilla; beat well. Combine the flour, baking soda and salt Add to creamed mixture; beat well. Stir in the oats, chocolate chips and toasted coconut and pecans. 
  • Drop by rounded teaspoonfuls onto greased baking sheets. Bake at 350° about 12 minutes or until browned. Remove to wire racks to cool.
