Cookies
I need to get my illustration game going, every day is a new cartoon opportunity…..
Me in kitchen making homemade bread, garden soup, and oatmeal cookies all from scratch for the last 3 and 1/2 hours….
Dinner time….
Mom: eating…. “did I ever tell you what a wonderful cook my mom was?”
Me: “yes you have” …. thinking….. ” every single dinnertime”

Mom: walking by the cookies….”ohh, cookies!” Takes 2 cookies
5 minutes later……”ohh, cookies!” Takes another 2
5 minutes later……”ohh, cookies!” And another 2

CowBoy Cookies
- 2 Eggs, large
- 2 cups Oats, old-fashioned
- 2 cups All-purpose flour
- 1 tsp Baking soda
- 1 1/2 cups Brown sugar, packed
- 2 cups Chocolate chips
- 1/2 tsp Salt
- 1/2 cup Sugar
- 1 1/2 tsp Vanilla extract
- 1 cup Coconut, sweetened
- 3/4 cup Pecans
- 1 cup Butter
Directions
- Place coconut and pecans on a 15x10x1-in. baking pan. Bake at 350° for 6 to 8 minutes or until toasted, stirring every 2 minutes. Set aside to cool.
- In a large bowl, cream butter and sugars until light and fluffy. Add eggs and vanilla; beat well. Combine the flour, baking soda and salt Add to creamed mixture; beat well. Stir in the oats, chocolate chips and toasted coconut and pecans.
- Drop by rounded teaspoonfuls onto greased baking sheets. Bake at 350° about 12 minutes or until browned. Remove to wire racks to cool.
